Bouchot (French for “shellfish bed”) is a traditional aquaculture technique for mussels. It means that the mussel was grown on ropes strung from wooden poles in the sea. Most of Bouchot culture takes place in France. Harvesting is done by hand or mechanically. Fishing for mussel seed without a Mussel Seed Capture Installation (MZI) is ususally done with a traditional beamtrawl. This is not a very sustainable method as it has high impact on the seabottom.
